We have designed and installed and upgraded many extraction canopy / commercial kitchen ventilation systems.

We install wall mounted and Island styles extract canopies into Schools Care Homes, Hotels , Restaurants , Cafe's and Take Aways etc

 

All our Commercial Kitchen Ventilation system are design and installed to meet the guidelines as set out in DW172/2108. This set of rules cover the construction and design of the canopy and the ductwork . All extract volumes and velocities are calculated using the methods set out in DW172 and from this duct size , fans and any ESP , UVO , Fine Filtration and Carbon filters , if required , are selected.

 ESP , UVO , Fine Filtration and Carbon filters all can form part of an EMAQ DEFRA risk assessment , which may be required.

 

The results of any EMAQ or DEFRA risk assessment can then be used to develop a Ventilation Statement that can be used to support a relevant planning application.

EMAQ  DEFRA Risk Assessments 

It is increasingly common that when applying for planning permission for a new extract system for a new commercial kitchen , that the local authority will require a comprehensive ventilation statement.

Many site are now going through change of use to a Restaurant or Class A5 Takeaway . It is not uncommon that change of use is granted , but that there are conditions attached .

This is an example of a condition that a recent client had to meet in order to proceed

​

Condition 4: Prior to the commencement of the development hereby permitted, details shall be submitted to and approved in writing by the Council, of the installation, operation, and maintenance of the odour abatement equipment and extract system, including the height of the extract duct and vertical discharge outlet, in accordance with the EMAQ+ publication "Control of Odour and Noise from Commercial Kitchen Exhaust Systems". Approved details shall be implemented prior to the commencement of the use and thereafter be permanently retained. The external sound level emitted from plant, machinery or equipment at the development hereby approved shall be lower than the lowest existing background sound level by at least 10dBA in order to prevent any adverse impact. The assessment shall be made in accordance with BS4142:2014 at the nearest and/or most affected noise sensitive premises, with all machinery operating together at maximum capacity. Reason: 

To ensure a satisfactory standard of development and to safeguard the amenities of the surrounding area. 

 

Condition 5: Prior to the commencement of the development hereby permitted, machinery, plant or equipment and the extract/ ventilation system and ducting at the development shall be mounted with proprietary anti-vibration isolators and fan motors shall be vibration isolated from the casing and adequately silenced and maintained as such Reason: To ensure a satisfactory standard of development and to safeguard the amenities of the surrounding area.  

 

In one case a client in the Lake District Park received a change of use permission , but did not read or fully understand the conditions that had been applied.

They proceeded to have installed an extract system installed that did not meet the conditions in the change of use approval !

The Local Authority received a  complaint from a local resident that they had not seen any planning notices  and as a result the site did not even get to open !

We were contacted to carry out a risk assessment to EMAQ or DEFRA , design a system that met the requirements of the  

risk assessment . The Risk Assessment and Design then formed part of a Ventilation Statement to be sent to the Local Authority for approval !

Our Ventilation Statement along with other information supplied by a local planning consultant were accepted and permission for a significantly revised extraction system was granted.

However the client , lost over 3 months of trading and had to spend again to have the original system altered to include the required "Control of Odour & Noise " .

While we cant do the full application for you , we can provide a comprehensive ventilation statement that includes all the detail the planning authorities are looking for.

This is quite an undertaking and will include 

Site Risk Assessments  ( A score to determine the level of odour grease & smoke control required , calculated using EMAQ and DEFRA guidelines )

Noise impact survey's , if required

Elevation drawings and all the calculation to support fan and duct selection etc.

Extract and supply fans are selected are from leading manufactures and selected to meet the required flow rates and resistances. canopy and ducting.

One of our advantages is that we have experienced staff, who have worked for a manufacturer of extraction canopies and have previously, managed a national duct work maintenance and cleaning company. Because of this  experience we can avoid many of the issues that may occur.  Our designs stem from a knowledge of, what works and why.

Do you know that if you have gas cooking equipment, you also require an air input or make up air system?

With most of the system out of sight it doesn't always get the attention required to work correctly. Very rarely will you see the extract duct work, extraction fan or the roof cowl etc.

 

However they are the components that when correctly specified make sure all works as expected. Above all you want that new impressive looking extraction canopy to work!
